Key Lime Parfait
Bursting with vitamin C, this drink serve as fat-free, virtually sodium free.

Fresh lemon or lime juice to grozenor canned to boost the vitamin C content while brightening the flavor.

Ingredients:
1 can (12 ounces) evaporated milk
1 envelope unflavored gelatin
1/2 cup confections sugar
1/2 cup reduced-fat sour cream
1/2 teaspoon grated lime zest
1/2 cup bottled key lime juice or fresh lime juice
Instructions:
1. Pour the evaporated milk into a large mixing bowl and place in the freezer until ice crystals begin to form, about 1 hour.
2. In a glass measuring cup, sprinkle the gelatin over 1/4 cup cold water and let stand for 5 minutes or until softened. Place the cup in a pan of simmering water and heat for 4 minutes or until the gelatin dissolved. Cool to room temperature.
3. Beat the partially frozen evaporated milk until soft peaks form. Gradually beat in the confectioners sugar and continue whipping until stiff peaks form. Beat in the sour cream. Beat in the lime zest and cooled gelatin mixture until well combined. Place the bowl in the refrigerator and chill for 30 minutes or until the mixture begins to mound.
4. Fold the lime juice into the milk mixture. Transfer for 8 parfait glasses and chill for 2 hours.
