Snow Fungus with Dang Shen
This soup nourishes Skin, strengthens Lungs, Spleen and Stomach.

Ingredients:
3 white fungus
1/2 ounce codonopsis ( dang sheng)
1/2 ounce rock sugar
4 cups water
Instructions:
1. Soak the white fungus in water for 1 hour. Trim stems
and tear the fungus into florets.
2. Rinse the dang shen. Bring 4 cups of water to boil.
3. Add the dang shen and continue to boil for 10 minutes, then lower heat and simmer for 1 hour ot until the liquid is reduced to 3 cups.
4. Remove the dang shen from the pot and discard.
5. Add the white fungus and the rock sugar to the liquid and boil for 5 minutes. Lower heat and simmer the soup for further 30 minutes. Serve hot.
