Date, Honey and Carrot Muffins
Ingredients:
!/4 cup butter
1/2 cup honey
1/2 cup fresh milk
2 eggs
1 tablespoon lime zest
1 cup whole wheat flour
1 tablespoon all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1 cup grated carrot
1 cup chopped dates
Instructions:
1. Melt butter and honey. Cool. Add milk,
eggs and lime zest. Sift together both
types of flour, baking powder and salt. Add
to the butter mixture. Add carrots and
dates and stir until just combined.
2. Spoon the batter into greased muffin cups and
bake at 180 C/ 360 F for 20 minutes until
cooked all the way through.
