Chickpea and Watercress Salad
Chickpeas are added to chopped watercress and dressed with tasty balsamic vinegar.

Ingredients:
1 can chickpeas (15 oz.), rinsed and drained
1 bunch watercress
1 bell pepper
2 teaspoon olive oil
1 clove garlic, minced
Balsamic vinegar, for sprinkling
Instructions:
1. Heat oil in a small skillet over medium-high heat. Add chickpeas and garlic and cook for 2 - 3 minutes to warm the chickpeas and infuse them with a garlicky flavor. Add salt and pepper. Remove from heat.
2. Spread watercress on a serving plate. Spoon chickpeas onto the center of the plate.
3. Decorate the salad with red pepper strips. Sprinkle with balsamic vinegar and serve.
