Chicken With Dried White Fungus Soup
Ingredients:
1 chicken about 2 pounds
1 ounce white fungus
4 1/4 cups water
2 teaspoons salt
Instructions:
1. Wash and skin chicken. Remove any trace of fat, wash and drain.
2. Soak white fungus in warm water and pick out all foreign matter. Wash and drain, squeezing out all moisture.
3. Combine all ingredients except white fungus and simmer for 20 minutes. Add white fungus and continue to simmer for another 20 minutes.
