Chicken and Dried Chestnut Soup
Slowly simmer chicken in a big pot along with dried chesnuts preserve the vitamin and flavour.

Ingredients:
30 dried chestnuts
1 chicken, about 3 pounds
6 1/2 cups water
2 teaspoons salt
1 teaspoon light soy sauce
1 teaspoon pepper
Instructions:
1. Soak dried chestnuts for a few hours or boil them for a
few minutes and allow to cool.
2. Wash and clean chicken and cut into large joints. Combine all ingredients in a pot with a tight lid and simmer for an hour.
3. Alternatively, use a pressure cooker and cook under high pressure for 30 minutes.
