Braised Skinned Duck
Ingredients:
1 duck, about 4 pounds
4 sweet dates
3 pieces dried tangerine peel
2 teaspoon salt
8 3/4 cups water ( half as much for pressure cooking)
Instructions:
1. Clean duck thoroughly and cut into large joints. Remove every shred of skin and yellow fat found in the region of the neck and breast.
2. Combine all ingredients and simmer for 2 hours or so. The liquid should have been reduced by about half at the end of
cooking time.
3. Pressure cooking needs only 4 1/4 cups water or even less as long as liquid level covers duck joints.
