Tomato and Potato Soup
Ingredients:
2 tomatoes, wedged
2 potatoes, wedged
1 carrot , wedged
1/4 pound grams pork ribs
1/4 pound lean pork
1 slice old ginger
10 cups water
Seasoning:
1 teaspoon salt
1 teaspoon light soy sauce
Instructions:
1. Scald lean pork and pork ribs in boiling water for 3 minutes. Drain and rinse.
2. Bring 10 cups water to a boil. Add potatoes, carrot, ginger and scalded meat.
3. Bring contents to a boil and then lower the heat. Cover the pot and simmer the soup for 1 1/2 hours. Add wedged tomatoes and continue simmering for another hour.
4. Add seasoning before serving.
