Pearl Barley Drink
Barley is very nutritious and a rich source of protein and B-complex vitamins.

Ingredients:
3 ounces pearl barley
1 1/2 ounces candied winter melon strips or rock sugar to taste
12 cups water
Instructions:
1. Bring the 12 cups of water to a boil in a pot. Rinse and
drain the pearl barley.
2. Put the pearl barley and candied winter melon strips in the pot and bring it to a boil again.
3. Lower the heat and partially cover the pot. Leave to simmer for 1 1/2 hours. Drink barley water warm . The barley and melon strips can be eaten.
