Golden Papaya and Crab Salad
Crab meat and papaya dressed with Lime Vinaigrette.

Ingredients:
1 pound lump crabmeat
1/2 pound sugar snap peas, string removed (2 cups)
1/2 small red onion, chopped
2 medium papaya, peeled, remove seeds and diced
Lime Vinaigrette:
1 tablespoon extra-virgin olive oil
1/4 cup fresh lime juice
1/4 finely chopped fresh parsley
2 dashes tabasco sauce
1 teaspoon sugar
Instructions:
1. Place the crabmeat in a large mixing bowl. Break the meat into bite size pieces.
2. Add the peas, onion and combine well. Stir in the papaya, vinaigrette, salt and pepper and toss well. Serve.
