Black Bean & Jicama Salad
Tender black beans, tossed with cunchy jicama, cilantro and lime juice.

Ingredients:
1 can black beans, drain; or I cup of cooked black beans
1 cup jicama, peeled and rinsed
1/4 cup feta cheese
5 tablespoons lime juice
1/3 cup minced cilantro
2 tablespoons scallions, chopped
2 teaspoons honey
4-8 lettuce leaves, rinsed and crisped
Instructions:
1. In a bowl, combine beans, jicama, cheese, lime juice, cilantro, scallion and honey. Mix well. You may refrigerate for up to 4 hours.
2. To serve, spoon the mixture into lettuce leaves.
