Satay Chicken and Peanut Sauce
This is the famous south east asian grilled chicken skewers with peanut sauce dipping.

Ingredients:
1 pound boneless chicken thigh
marinade A:
1 teaspoon tumeric powder
3/4 teaspoon corriander powder
1/4 cummin powder
1/8 fennel powder
1 stalk lemon grass
2 pieces shallots
2 pieces ginger
sugar to taste
salt to taste
Peanut Sauce:
2 cups roasted peanuts, ground
2 cups water
3 pieces shallot, ground
2 slices ginger, ground
1 tablespoon ground chili (optional or to your flavour)
1/2 cup brown sugar
1 tablespoon tamarine juice
salt to taste
Instructions:
1. Cut chicken into bite-size, marinate with A spices for 4-5 hours.
2. Thread the chicken pieces in a skewer and grill.
To prepare the Peanut Sauce:
1. Heat the oil, put in the ground ingredients excepts peanut. Fry for about 1 minute.
2. Put in peanut, water (or more water, depends on your preference of the thickness for the sauce), sugar and tamarine juice, cook in medium heat for 20 minutes or until the sauce is thicken.
