Chinese Chicken and Corn Soup
Ginger chicken soup relieves headaches, migraines and painful periods

Ingredients:
6 cups chicken stock
11 ounces fresh or can sweetcorn kernels
1 inch piece of fresh root ginger, grated
10 ounces shredded cooked chicken
6-8 spring onions, sliced finely
1/2 teaspoon sesame oil
salt and freshly ground pepper
chopped fresh coriander, to garnish
Instructions:
1. Heat the stock for a few minutes in a medium saucepan, then add the sweet-corn, ginger and chicken.
2. Bring to the boil, then reduce the heat and simmer for 5 minutes. Add the spring onions and sesame oil, and season to taste.
3. Cook for a few minutes, then serve garnished with corinader.
