Halibut with Lime and Cilantro
Ingredients:
2 tablespoons lime juice
1 tablespoon chopped cilantro
1 teaspoon olive oil
1 clove garlic, finely chopped
2 halibut or salmon steaks
Freshly ground pepper to taste
1/2 cup salsa
Instructions:
Mix lime juice, cilantro, oil and garlic in rectangular pan, 11 X 7 X 1 1/2 inches. Add fish, turning several times to coat with marinade. Cover and refrigerate 1 hour, turning once. Set oven control to broil.
Spray broiler pan rack with nonstick cooking spray. Remove fish from marinade; discard marinade. Place fish on rack in broiler pan. Broil with tops 4 inches from heat 8 to 12 minutes, turning once, until fish flakes easily with fork.
Sprinkle with pepper. Serve with salsa.
