Stewed Cucumber with Dried Scallops
Cucumber is rich in Vitamin E. Stew with dried scallop create a very tasty combination.

Ingredients:
1 poound 4 ounces young cucumbers
3 dried scallops
1 slice ginger
3 clovers garlic
Seasoning:
1/3 teaspoon salt
1/3 teaspoon brown sugar
pinch of pepper
Sauce:
1/2 teaspoon cornflour
3 tablespoon water
Instructions:
1. Soak dried scallops in water for 2 hours. Pound into shreds with the flat of a knife (leave water used for soaking dried scallops for later use).
2. Peel cucumbers. Cut open and wash. In a pot heat 1 tablespoon oil and stir fry ginger, garlic and dried scallops until
fragrant.
3. Add 1 cup of water used for soaking dried scallops, cucumbers and seasoning. Bring to the boil and cook for 20 mins over low heat.
4. Dish up cucumbers and cut into small chunks. Put the sauce ingredients into the pot and bring it to the boil. Pour it over cucumber.
