Chicken in Portuguese Style
Ingredients:
1/2 chicken
1 pound 4 ounces potatoes
1/2 onion
1/3 carrot
2 cloves shallot, grated
2 teaspoon curry powder
1/2 cup evaporated milk
Marinade:
pinch of pepper
1 tablespoon light soy sauce
1 teaspoon cornflour
Seasoning:
1/2 teaspoon salt
1/2 teaspoon brown sugar
1 1/2 cup water
Instructions:
1. Cut chicken into chunks and marinade.
2. Peel and thickly slice potatoes.
3. Skin and cut the onion into chunks. Peel, thickly slice and cook carrot in boiling water for 10 minutes.
3. In a pot heat 2 tablespoon oil, stir-fry shallot and curry powder until fragrant.
4. Put into chicken, onion and potatoes, and stir fry for a while. Add carrot and seasoning, bring to the boil and cook for 30 minutes over low heat. Pour in evaporated milk and bring to the boil again.
