Pasta with Pesto Sauce
Ingredients:
1 cup fresh basil leaves
1/2 cup pine nuts, walnuts or raw cashews
1 large clove garlic, peeled
2/3 cup olive oil
3/4 cup grated Parmesan cheeze
1 pound pasta, cooked and drained
Instructions:
1. Put the basil leaves, nuts and garlic in a food processor or
blender. Process until they are finely chopped, then slowly
drizzle in the oil while the machine is still running.
2. Add the cheese and briefly process until the mixture is smooth. If the sauce is too thick, add 1 tablespoon of water.
3. Place the cooked, warm pasta in a bowl. Add the sauce to the pasta and toss with a fork until the pasta is coated.
