Braised Tofu with Two Kinds of Shrimps
Quick and tasty Stir-fry tofu with fresh and dried shrimps.

Ingredients:
1 box home-style tofu
1/2 pound fresh shrimp
1/4 pound dried shrimp
1 spring onion (striped)
Seasoning:
A:
1/2 teaspoon salt
4 egg white
1/2 tablespoon cornstarch water
B:
1/2 teaspoon cooking wine
pinch of pepper
1 cup chicken stock
C:
1 tablespoon cornstarch water
1/2 teaspoon sesame oil
Instructions:
1. Clean and dry the shrimps, add seasoning (A) and mix.
2. Cut the tofu to thick, clean the dried shrimp, then drain
the water.
3. Heat the oil till 160' C, add the shrimp and fry quickly , drain the oil. Fry spring onion, seasoning (B) , 1 tablespoon oil and all the ingredients, then simmer over low heat.
4. Add the cornstarch water and sesame oil.
