Curried Fried Rice
A delicious fried rice, made with long-grain rice, curry powder and your choice of meat.

Ingredients:
3 cups cold cooked long-grain white rice
4 teaspoons peanut oil
8 scallions, thinly sliced
2 teaspoons curry powder
2 carrots, diced and steamed
1 cup steamed chopped green beans
1/2 cup diced lean turkey ham
Instructions:
1. Place the rice in a shollow bowl; with moistened fingers, mix to separate the grains.
2. In a large nonstick saucepan, heat the oil. Add the scallions and cook, stirring as needed, until softened, 2-3 minutes. Add the curry powder, stir constantly, until just fragrant about 30 seconds.
3. Add the carrots, green beans and ham; cook, tossing lightly, about 1 minute. Stir in the rice and 2 tablespoons water; cook, tossing gently to combine, until the rice is thoroughly coated.
