Cold Tofu Salad With Soy Ginger Dipping Sauce
Very cooling salad for a hot summer day. Drizzled with fresh ginger and soy sauce.

Ingredients:
2 cups cracked ice
1/2 pound firm tofu, drained and cut int 1/4 inch strips
4 scallions, white part only, thinly sliced
2 teaspoons black seasame seeds
1 cherry tomato, cut into 4 wedges for garnish
Soy Ginger Dipping Sauce:
1/2 cup soy sauce
3 tablespoons rice vinegar
1 teaspoon peeled and finely minced ginger
1 scallion, think sliced
1/4 cup
Instructions:
1. Fill salad bowl with ice.
2. Arrange the tofu on the top with some scallions and seasame seeds.
3. Drizzle with the dipping sauce. Garnish with the tomato and serve.
