Watercress and Spinach Soup
Spinach helps to clear wastes from the bowel and prevent constipation and diverticulitis.

Ingredients:
1 tablespoon olive oil
2 medium onions, peeled and sliced
3 medium potatoes, peeled and cubed
1 bunch watercress, washed and chopped
8 ounces spinach, washed
4 1/2 cups chicken stock
salt and freshly ground pepper
2 tablespoon fresh parsley, or coriander
1/2 cup natural yogurt, to garnish
Instructions:
1. Heat the oil in a large pan. Cook the onion and potatoes for 5 minutes. Add the watercress and spinach and cook for a further 5 minutes.
2. Cover with stock, bring to the boil gently and simmer for 30 minutes or until the potatoes are soft. Remove from the heat blend and add seasoning.
3. Garnish with fresh herbs and a swirl of yogurt when serving.
