Citrus Carrot Salad
This is a great salad to serve with jacket potatoes or
a creamy-cheese pasta.

Ingredients:
About 50grams watercress
500 g baby carrot , grated
3 oranges, peeled and segmented
ginger dressing:
50 ml ginger vinegar or 2.5 cm grated, mixed with 50 ml
white rice vinegar
1/2 teaspoon wholegrain mustard
1 teaspoon honey
grated rind and juice of 1 medium orange
3 tablespoons olive oil
2 tablespoons toasted sesame seed
sea salt and freshly ground black pepper
Instructions:
1.To prepare the dressing , mix all the ingredients until
thoroughly combined, then set aside.
2.Place the watercress in a salad bowl, arrange the grated
carrots and orange segments on top, pour over dressing and
serve.
